Creeping Charlie is INDEED EDIBLE! It is quite MINTY, SWEET, & DELICIOUS! Packed with vitamin C and can be used in all sorts of culinary dishes. From medicinal teas, mojitos, smoothies, pesto, topped on salads, or even in your ICE CREAM! Really anywhere you would use mint you can substitute with creeping charlie!

Simply steep about 2 cups of freshly picked creeping charlie leaves (more or less to your taste) into 2 cups of heavy whipping cream & the sweetener of your choice for about thirty minutes. I used a little less than 1/2 cup sugar but maple syrup or honey would be really yummy in this too. After simmering let mixture cool and then place in your blender and blend until completely smooth. I then usually let the mixture spend the night in the fridge until the next day when we make our ice cream. The mixture has to be COLD to work for ice cream.
For our family ice cream I usually use a base of 2 cups cream & 2 cups whole milk. In this batch I also added a couple tablespoons of rum which I added while steeping the creeping charlie. We’ve got the Kitchen-aid mixer ice cream attachment so that’s how we roll when it comes to making ice cream…but this can work with any method!
